Strawberry gazpacho recipe

Cold soups such as different types of gazpacho are perfect recipes for the summer months . On this occasion I bring the recipe for strawberry gazpacho to the cooking blog.

This dish is similar to traditional Andalusian gazpacho. However, by adding strawberries we get a sweeter touch that complements perfectly with the acidity of the tomatoes.

It's a very nutritious dish that provides us with a large number of benefits . Include all types of vitamins in our diet, such as ascorbic acid (vitamin C), essential for maintaining good health.

In addition, strawberries have very few calories and add extra fiber, increasing satiety, preventing us from snacking between meals .

For all this and because it is a highly refreshing dish, I prepare this recipe at least once a week during the summer months, either as a starter or as a first course.

Children will love it thanks to the sweet taste that add strawberries to this type of gazpacho.

This gazpacho is very simple to prepare. Add pepper, garlic, tomatoes, strawberries and cucumber to the blender, blend everything, let it rest in the refrigerator and serve.

How to make strawberry gazpacho

  1. Wash the tomatoes and chop them into small pieces. If the skin is not very thick, it is not necessary to peel them. We reserve.
  2. Peel the onion and garlic clove and chop them. We save for later use.
  3. Cut the sides of the cucumber, peel and cut into slices. We reserve with the rest of the vegetables.
  4. Cut the pepper in half, remove the seeds and pour plenty of water. We cut the pepper into pieces.
  5. If we decide to add bread for a greater consistency, we moisten the crumb bread and store it with the rest of the ingredients.
  6. We remove the pedicle and sepal (the stems) of the strawberries and cut them.
  7. Add the vegetables, the wet bread and the strawberries into the blender glass. We also added a splash of olive oil and a tablespoon of apple cider vinegar. Optionally we can also put a pinch of salt.
  8. We crush everything for about 2 minutes until we get a good mix of all the ingredients.
  9. Optionally we can strain the strawberry gazpacho to remove skins or seeds present in the mixture.
  10. Let the gazpacho cool in the fridge for between 1 and 2 hours until it is very cold.
  11. Once it is very cool, we serve it in 4 containers and we can now enjoy an exquisite and healthy dish perfect to relieve the summer heat. In the next section we show you some ingredients that you can add as a side dish.

Garnish for strawberry gazpacho

To make this exquisite gazpacho dish prepared with strawberries even more complete, we can add small pieces of toasted bread or croutons, pieces of cucumber, tomato or peppers . We can even cut strawberries and add them to the dish.
