Melon gazpacho with cucumber and ham recipe
I love to drink cold soups when summer comes . The Andalusian gazpacho is my favorite. Every year, when summer arrives, during the weekend I prepare 5 liters of gazpacho to drink throughout the week.
A year ago I decided to try different versions of gazpacho. One of the ones I liked the most was the melon gazpacho that It is usually eaten with pieces of ham, croutons and cucumber .
This recipe made with melon is very refreshing, smooth, tasty and with a sweet touch of this exquisite fruit. I have decided to bring it on the blog today since many of my acquaintances had never tried it.
This dish is perfect for cooling off during hot summer days . We recommend taking it as a starter, before the main course.

How to make melon gazpacho
- The first step is to peel all the vegetables and the melon. Chop the garlic clove very finely. We peel the onion or chive and also chop it. We reserve.
- Peel the cucumber and cut it into cubes or slices.
- We open the pepper in half, remove the seeds from inside and pour plenty of water. We cut into pieces.
- Peel the melon and cut it into medium-sized cubes.
- We place all the vegetables and the melon in a blender glass.
- We cut the bread into large pieces, wet them and add them to the blender glass.
- We add a little vinegar, olive oil and a pinch of salt to the mixture.
- We blend with the mixer at maximum speed for approximately 2-3 minutes. Once we have everything well mixed, it is advisable to let it rest in the refrigerator until it is very cold.
- We serve it in a bowl and we can now enjoy a good cold melon soup. We add the pieces of serrano ham and the croutons. In the last section we show you more accompaniments that you can add to your melon gazpacho dish.
Preparation of melon gazpacho with Thermomix
We can also prepare this recipe using our food processor. We simply add all the ingredients to the Thermomix glass, except the oil.
We blend everything at speed 6 ascending up to 8. Little by little we add the oil until everything is well emulsified.
Accompaniments for melon gazpacho
We can add many different toppings to our dish to add more flavors to our dish.
We like to accompany this cold soup with croutons (toasted bread), pieces of Serrano ham, pieces of cucumber, pieces of tomato, pepper or even a hard-boiled egg.
