How to make zucchini cream

  1. We wash the zucchini and cut them. We recommend doing it in cubes or slices. We can remove the skin or leave it. The skin contains many vitamins that will bring many benefits to our body. However, there are people who prefer to remove it.
  2. Peel and cut the onion and garlic clove. Optionally we can also add a potato to the recipe. If so, we cut it into pieces.
  3. Put the cut vegetables in a casserole and add the 750 ml of vegetable broth. At this point we can add a splash of oil to the ingredients.
  4. Heat over low heat and when it starts to boil, stir the mixture for about 20 minutes, periodically checking the condition of the vegetables.
  5. Once the ingredients are soft, we remove the casserole from the heat and add the cheeses (we can use cooking cream instead of cheeses).
  6. We beat the mixture until there are no chunks of vegetables and it acquires the desired texture.
  7. We spice to our liking. We can put, for example, salt, pepper or curry.
  8. Add a little grated cheese on top of the zucchini cream and serve.

Light zucchini cream

This recipe is for those of you who want to have a recipe that is even healthier than the regular zucchini recipe. To achieve this we will replace the cheeses with skimmed milk. We will also remove the optional potato ingredient.

Preparation of the light zucchini cream

  1. Wash the zucchini and cut them into slices.
  2. Peel and cut the onion and garlic.
  3. Sauté the vegetables with a drizzle of oil in a casserole along with the 750 ml of vegetable broth.
  4. We left the mixture for about 20 minutes on medium-slow heat.
  5. Add skim milk and optionally a little salt. We let it boil.

How to choose zucchini? Look for zucchini firm to the touch, compact, without spots on the skin. In addition, small or medium-sized ones are preferable to large ones, since the latter usually have many seeds and less tender meat. It is better not to store zucchini for many days; as they mature they acquire a slightly more bitter taste.
