Pumpkin and apple cream recipe
Today it is Sunday. I woke up a little tired from the whole week. Christmas has just passed and it's time to lose those extra pounds from nougats and polka dots. For this reason I have decided to eat something healthy, light and easy to cook. I have thought about cooking a pumpkin cream, but a little different. Today I will add apples and to give it a little more Asian touch (I love Asian food) I will also add curry. This recipe is perfect for cold winter days as it will help us warm up.

Ingredients of pumpkin cream with apples
Pumpkin and apple cream recipe step by step
- We clean the apples, peel them, core them and cut them into quarters. Next we clean the pumpkin by removing the skin and the central part where the threads and seeds are located. We cut it into cubes.
- Cut the onion into julienne strips and the leek into small pieces.
- We put a splash of oil in a pot and add the cut onion.
- We leave the onion for a while. When it starts to brown, add the rest of the vegetables and leave it on the heat for about 3-5 minutes.
- Next we add the vegetable broth, salt and thyme. We let it sauté over medium-low heat for about 20 minutes.
- After this time we blend with the blender. If you want the cream to be less thick you can add additional vegetable broth.
- We toast the pumpkin seeds.
- We serve the dish with the pumpkin seeds, cream and croutons on top. At this moment we add the curry or spice that we like the most.
Pumpkin cream with apples in the Thermomix
To prepare the pumpkin cream with apples recipe using the Thermomix we will use the same ingredients. We simply have to cut them before using the food processor.
Recipe with the food processor step by step
- We add a little oil and the onion to the robot glass. We chop for about 5 seconds at speed 4.
- Add the pumpkin and apples, peeled and cut into pieces, into the glass. Sauté the mixture for 5 minutes, at 120ºC and speed 1.
- We add the 750 ml of the vegetable broth and let the ingredients cook for about 25-30 minutes at 100ºC and speed 1.
- We grind for 1 minute at ascending speed 5-10.
- We add salt to taste, spices (I choose curry) and serve. Optionally we put the pumpkin seeds and croutons on top.
