Easy pumpkin cream with carrot recipe

Pumpkin cream is one of my favorite dishes to cook in both winter and summer. It is an easy recipe to make and also very healthy. This time I bring you a small modification of the original pumpkin cream. Today we will add carrots that will give it a very peculiar touch.

Feel free to give it your special touch by adding the species you like the most. You can taste it with cumin, coriander or curry. Let your imagination fly and try new things in the kitchen!

Pumpkin and carrot cream recipe step by step

  1. We clean the pumpkin by removing the skin and the central part (where the threads and seeds are located). We cut it into cubes.
  2. Peel and cut the onion into julienne strips.
  3. We peel the potato and cut it into square pieces.
  4. We put a little oil in a pot and add the cut onion. It is important to add the onion first as it takes longer to cook.
  5. When it is a little golden, we put the potato and pumpkin into the pot.
  6. Pour in the chicken broth or vegetable broth and let it boil for about 20-25 minutes.
  7. After approximately 20 minutes, when the vegetables have softened, add the cheeses and blend with the blender.
  8. Before serving, toast the pumpkin seeds for 1-2 minutes. Once toasted, we put the pumpkin cream on top.
  9. We serve the dishes and season with salt and pepper. Optionally we can add croutons or fried bread.

Preparation with the kitchen robot

  1. We put the carrots and the cut leeks together with a little oil inside the glass of the Thermomix.
  2. We chop for 5-6 seconds at speed 4.
  3. We put the option to fry the Thermomix and leave it for 4-5 minutes at speed 1 at a temperature of 120 ºC.
  4. Put the pumpkin and the chopped leg and cook everything for 10 minutes at 100ºC and speed 1.
  5. Add the vegetable or chicken broth and cover all the vegetables with the liquid.
  6. We cook again this time with the broth for 15-20 minutes at 100ºC and speed
  7. We finish the recipe by grinding the vegetables for approximately 1 minute at a progressive speed of 5-10.
  8. Season with salt and pepper to taste and serve!
