Pumpkin and zucchini cream recipe step by step
- Clean the pumpkin by removing the skin and the central part (where the threads and seeds are located) and cut it into small cubes.
- Cut the zucchini also into cubes. Peel and cut the onion.
- Sauté the onion over low heat in a pot with 2 or 3 tablespoons of olive oil and a pinch of salt.
- Add the pumpkin and zucchini and sauté for a couple of minutes.
- Add the broth to cover and let it cook for around 20 minutes.
- Add the cheeses and blend the vegetables well with the blender. If the cream is very thick, you can add a little cooking broth.
- Serve and add a little pepper to taste and a splash of oil. You can also add some croutons or fried bread croutons.
