How to make cod fritters step by step

  1. The first step in cooking cod fritters is to desalt the fish. We let it soak for approximately 48 hours and every 6-5 hours we changed the water. Once this time has passed, we crumble it into small pieces and reserve it in the refrigerator until we make the recipe.
  2. We take a bowl and sift the flour to avoid the formation of lumps. Add the teaspoon of Royal yeast. We remove the ingredients and save.
  3. We take the spring onions, peel them, clean them a little and chop them into very small pieces.
  4. In a frying pan we add a little olive oil and let it heat up. Once hot, add the onion and cook for about 3 minutes over medium heat until transparent. At this point we put the pieces of shredded cod and let it cook over high heat for about a minute. It is important to stir during this time to prevent the cod from sticking to the pan.
  5. After this time, remove the cod and onion from the heat. Chop the parsley and put it in with the rest of the ingredients (the cod and the onion pieces). We mix well. Optionally we can put the cod, the spring onions and the parsley in a mortar and we finish grinding everything well.
  6. In a separate saucepan add the butter and water. Set the heat to medium intensity and stir while the butter melts. If it starts to boil, remove the pan from the heat and continue stirring until it has completely melted.
  7. Add the sifted flour and a touch of salt. We remove everything and put it back on medium heat. We continue to stir all the ingredients until we get a more or less homogeneous mass. Once we have this mass, we remove the casserole from the heat and let it rest for 5-10 minutes so that all the ingredients are well integrated.
  8. After this time we are breaking the eggs one by one and adding to the mixture. Between egg and egg we remove the dough. Next we add the mixture of cod, spring onion and parsley and stir everything vigorously to manage to integrate each of the ingredients of the recipe well. Let the mixture rest for 20-25 minutes.
  9. In a casserole we put plenty of oil to heat. We must think that the fritters should be submerged. This point is key. If the oil is very hot, the fritters will be very cooked on the outside but raw on the inside. On the other hand, if the oil is not hot enough, the dough will fall downwards. It is a matter of finding the balance.
  10. The first fritters will help us to adapt the correct temperature. With two spoons we are making small balls and we put them in the hot olive oil. We put them in oil and wait until they are well golden. Then we take them out and put them on a plate with absorbent paper to remove excess oil. We repeat the process until we finish all the dough.
  11. All that remains is to serve them and enjoy a good plate of fluffy homemade cod fritters!
