Chickpea stew with Andalusian cod recipe
Today I bring to the cosmorecetas blog one of my favorite recipes As for the mixture of legumes and fish: chickpeas with cod.
This is a typical dish of the country which is prepared during Holy Week. However, I cook it many times during the week during the year since It is a very healthy and nutritious dish. In addition, it is very easy to prepare, in 30 minutes you have it ready and you don't need too many ingredients.
Cod is a very healthy white fish. since it contains a low level of fat and high amounts of protein. If we also mix it with legumes then we have a perfect dish for our diet.
To make this dish healthier
We wanted to use a natural tomato.

How to make chickpeas with cod
- We peel the onion and cut it into small pieces. We repeat the same process with the garlic clove.
- Once we have the onion and garlic well cut, we take a saucepan and add a little extra virgin olive oil. Let's let it warm up.
- Once the oil is hot, add the onion and garlic and let it cook over low heat until the vegetables begin to brown a little.
- While they are browning we can grate the tomato. We cut it in half and grate it with the typical cheese grater. We keep in a bowl.
- When the onion and garlic begin to take color, add the teaspoon of flour (which will help to give a good texture), the tablespoon of paprika and the tomato.
- Let it cook over medium heat for about 5 minutes. It is important to stir to help all the flavors mix well.
- After this time we add the shredded cod along with the 500 grams of cooked chickpeas. If we prefer we can also add the whole cod loins. We mix all the ingredients for 1-2 minutes over low heat.
- We cover with water and add a little salt. Let it cook over medium heat for approximately 20 minutes.
- We can now serve the chickpeas with cod on 4 plates. The only thing left to do is enjoy an exquisite meal with our family or friends!
