Recipe for fluffy and homemade wind fritters

How to make wind fritters step by step
- We take a casserole and pour the 0.25 liters of water, the 50 grams of butter and a little salt. Let it heat over medium heat until the mixture begins to bubble (to boil).
- Once the mixture of water and butter begins to boil, we stop the heat and add the 180 grams of flour. Stir the mixture well until the buñuelo dough separates from the walls of the casserole.
- Next we are adding the 4 eggs one by one. While we add them to the mixture it is important that we keep stirring. We can stir with electric rods or using a wooden spoon.
- We continue to mix until we obtain a homogeneous mass without lumps. We let the Lenten fritters dough rest for 30-60 minutes.
- After this time we put abundant oil in a pan (enough so that the fritters can be submerged). Once the oil is very hot, we take the dough with a spoon, trying to make it more or less spherical in shape, and we add it to the pan.
- We can use a slotted spoon to press them down so that they are well submerged. While they are frying, we prepare a plate with absorbent paper where we will put the fried wind fritters.
- We repeat the process until we finish all the dough. Then we put sugar on top and we can now serve them. We let them cool on the paper plate and we can surprise our friends with a good plate of wind fritters!
Thermomix wind fritters

How to prepare wind fritters in Thermomix
- In the Thermomix glass we add the butter, water and a little salt. We program at speed 4 at 100 ºC for about 8 minutes.
- After 8 minutes we add the 180 grams of flour. Mix for 15 seconds at speed 4.
- In a separate bowl, we beat the eggs well and add them little by little with the rest of the ingredients in the glass while keeping the mixture at speed 4. Once we have the dough made, we let it rest for about 30 minutes.
- We have already finished the Thermomix part. Now all that remains is to heat plenty of oil in a frying pan until it is very hot and add balls of the dough that we have just prepared until the fritters are well fried.

How to get a perfect shape
The first time you prepare wind buñuelos you will see that the shape is not the best (don't worry because they taste great). Pastry fritters use pastry bags to achieve a completely spherical shape.
If you want perfect fritters you can buy a pastry bag or you can follow the following advice: A trick to make the fritters more round is to use two spoons dipped in oil to make the shape round. The oil will prevent the dough from sticking to the spoon and we can give it a more spherical shape.
Leave room in the pan
It is important to leave space between fritters when we add the dough to fry since they swell during cooking. Hence its name: wind fritters. If we don't do it this way, the fritters could get stuck together.
