Fried yucca recipe
Today I bring to the blog one of my new discoveries this year, the yucca . This tuber is the root of a plant cultivated in many countries of South America, Africa and Oceania. In these countries its consumption is very common since it is a very economical food and it provides a lot of energy to the body.
In Spain it is not yet so well known, but little by little it is gaining more followers. A few months ago I heard very good things about cassava (also known in some countries as cassava) and when I had the chance I tried it. I remember that it was in a Venezuelan restaurant in the center of Barcelona.
Along with some meat arepas, we ordered some fried yucca chips with garlic and cilantro sauce. It was delicious! In addition, it does not contain gluten, making it perfect for people who are intolerant to it.
It has a high percentage of slow-absorbing carbohydrates and fiber, making it a very suitable food to take care of our belly.
A few days later I cooked it at home. It is very simple to prepare and with the cilantro sauce it is exquisite. The most important thing is to remove the skin very well and cook the cassava for the necessary time since it can contain certain toxic compounds if we eat it raw and with the skin on.
Another important point of the recipe is to leave it for the right amount of time, frying it on the stove. The goal is for the chips to be very crispy on the outside, but maintaining softness on the inside. For this reason, when we see that the pieces begin to be golden, we check their interior with a cutlery and if we see that it is crunchy on the outside and tender on the inside, it is time to remove them from the heat.

How to prepare fried yucca
- The first step in this recipe is to remove the skin from the cassava. If you bought it fresh, continue reading. If you bought them frozen you can skip the following steps until we put it in the pot to soften it.
- To remove the skin from this tuber, we recommend using a good peeler since it has a fairly hard skin and it is important to remove it completely since you can obtain some slightly toxic components.
- Cut the cassava in half and put water in a pot over high heat until it boils.
- Once the water is boiling, add the cassava pieces to the water and let it cook for 20-25 minutes over medium heat. The objective of this raisin is to soften the cassava pieces.
- Once this time has passed, we check that the tuber pieces are soft. For this step we can use a cutlery. If we can pierce the cassava well, it means that it is tender.
- Once it is soft, we remove the middle strand and cut them into chips.
- In a frying pan we add plenty of oil and leave it over medium heat until it is very hot.
- When the oil is very hot, add the cassava chips to the pan and start frying. It is important that during this process we rotate the cassava pieces to ensure uniform cooking of the root pieces.
- We take a plate and put absorbent kitchen paper where we will put the fried yucca to eliminate excess oil and remove extra calories.
- Once the cassava pieces are well browned, we remove them and place them on top of the absorbent paper that we have prepared.
- All that remains is to serve the fried yucca on a plate and accompany it with a delicious mayonnaise or cilantro sauce. Next we explain how to prepare an exquisite sauce prepared with cilantro and garlic to accompany this dish.
How to cook cilantro sauce for fried cassava
- In a bowl, chop the garlic cloves and coriander leaves.
- In the same container where we have chopped the garlic and cilantro, we add the mayonnaise (it is better if it is light to avoid adding extra calories to our recipe), the natural yogurt, the lemon juice and the apple cider vinegar. If necessary we can add a little salt to the mixture.
- We mix the ingredients well. I recommend using an electric mixer to save time and effort.
- Once the sauce is prepared, we can leave it in the refrigerator for about 10 minutes.
