How to make grandma's fish soup

  1. The first step is to let the clams rest in a saucepan with cold water.
  2. Meanwhile, we will peel and cut the vegetables. We wash the leek and celery and cut it into small pieces. We reserve.
  3. Cut the onion into brunoise and crush the 2 cloves of garlic into small pieces.
  4. We peel the prawns over a saucepan to save the juice they extract and give more flavor to our fish soup. We reserve the exoskeleton of the prawns.
  5. Inside the casserole we add a little olive oil and put the onion and garlic. We let it fry over medium heat.
  6. After about 3-5 minutes we add the prawn shells. Let cook for a few minutes.
  7. Meanwhile, we grate the ripe tomatoes and add them to the casserole with the rest of the ingredients. We remove all the ingredients.
  8. We add the 600 grams of various fish (hake, cod, monkfish...) and add water until all the ingredients are covered. We also add the bay leaf.
  9. We cover the pot with the lid and let it cook over medium heat for about 25 minutes. Before we can add a little salt.
  10. After this time we take out the fish and strain the fish broth to remove the bodies of the prawns.
  11. We remove the fish meat from the bones and put the fish meat into the broth that we have just strained. We let it cook over medium heat for 5 more minutes.
  12. After 5 minutes, we stop the heat and let it rest for 5 more minutes.
  13. All we have to do is serve and enjoy this exquisite fish soup.
