Battered fried baby squid recipe

The fried squid or squid dish is very typical of Mediterranean cuisine . This dish with a strong Spanish origin is prepared in bars, restaurants and beach bars on the coast as a delicious tapa.

I have to say that It is a super easy dish to prepare. . It is only a matter of buying very fresh squids and frying them, leaving them well coated. The most important thing is the quality of the squid, the quality of the oil we use to fry and the time we leave them in the pan. If we have these three controlled parameters, we will get some exquisite fried squid .

How to make fried squid

  1. The first step is to wash the squid to remove any sand that may be inside. It is also important to remove the squid's feather (the exoskeleton part). Separate the tentacles from the head and wash again. If we have chosen large squids then we cut them into pieces. If they are small we leave them whole.
  2. Once well washed, dry them a bit and add a little salt on top. Next we put the two flours in a bowl. We can use chickpea flour that will give it a curious texture. Next we add the baby squid into the bowl with the combined flour.
  3. While we add abundant oil in a frying pan and let it heat over medium heat.
  4. Once the squid are well coated and the oil in the pan is boiling, we pour the squid into the pan to fry them.
  5. We wait about 5 minutes until they are golden brown and finally we remove them from the pan and put them on a plate with kitchen paper to absorb some of the oil.
  6. We serve on a plate along with half a lemon. There are people who like to eat fried squid with aioli or mayonnaise.

Tricks for cooking delicious crispy fried squid

The most important part of the recipe is to put the squid in the oil when it is very hot. In this way we will get the squids to be very crunchy.

Another point to mention is the use of both types of flour. We can really only use one type. However, the combination of these flours will make the batter crispier and with a better texture. We have tried both ways and highly recommend using two flours. But in the end it is a matter of taste.

Sometimes we like to chop a little parsley and garlic and add it to the flour to give greater flavor to the frying.
