It is a very complete dish, perfect to warm up during the cold days of autumn and winter since it is a recipe that is served hot and, in addition, it has bacon and chorizo that provide extra calories to our stewed lentil dish.

How to make stewed lentils with vegetables
- If we use dry pardina lentils, it is important to let them soak the night before preparing the recipe so that they soften and can be cooked.
- We take the onion and garlic, peel them and chop everything into small pieces.
- We peel the carrots and potatoes. We cut the carrots into slices and the potatoes into cubes.
- We wash the green pepper, open it in half and remove the seeds from inside. We pour water inside and cut it into small parts.
- We take the tomatoes and cut them into quarters. We will put them in the pot and with the heat they will dissolve little by little.
- In a saucepan with oil, add the diced pieces of bacon and let them cook until the meat begins to be cooked.
- Next we add the onion and chopped garlic, the carrot and potato pieces, the pepper, the tomato, the bay leaves, the thyme branch and let it cook over medium heat for about 5 minutes while we stir the mixture.
- After approximately 5 minutes, add the chorizo pieces, a tablespoon of sweet paprika, a little salt and cover the pot with water.
- We let all the foods cook over medium heat for approximately 1 hour. It is important to cover the pot to achieve a better result.

Soak the lentils the night before
