Recipe for cod a la llauna
The recipe that I bring today is typical Catalan and it is very popular to prepare it during Holy Week. This llauna cod dish is very easy to prepare since all we need are ingredients that we find at home or in the nearest supermarket.
The name of this recipe comes from the fact that tin containers were previously used to prepare cod. Nowadays we normally use oven containers, for example, made of clay, which are not made of tin.
I love cooking this dish when I have guests over. The sauce made from parsley, garlic, paprika and white wine gives the cod a very tasty and delicious taste.
It is important to accompany this recipe with good quality baked beans and it is vital not to forget the bread. You will love dipping pieces of bread with the sauce that we will prepare!

How to make cod a la llauna
- The first step is to desalt the cod if we have purchased it without desalting. In a container in water we leave the 4 cod fillets that we will use for the recipe and let it rest for 48 hours. It is important to change the water every 8 hours approximately.
- The next step is to soak the beans (the night before) if we haven't bought them cooked.
- Once we have the desalted cod and the beans have been soaking for one night, we drain and cook the beans over low heat for 45 minutes.
- While the beans are cooking, coat the cod fillets with the wheat flour.
- We take a frying pan and add oil to it. We wait for it to be hot and add the floured cod fillets. We fry over low heat.
- Once done, remove them and let them rest in an oven container. I prefer to leave them in a tin container since that's where the name of the recipe comes from.
- When the beans are cooked, we also put them in the containers together with the cod fillets.
- Next we chop the parsley and garlic and put it in the same pan with the oil that we have used to fry the loins. Optionally we can add a little salt.
- Once the garlic pieces begin to brown, add the glass of white wine and the sweet red paprika. We mix the ingredients a little.
- Let it cook for a few minutes (3-4 minutes) to allow the alcohol to evaporate. It is important to stir the ingredients and make sure the garlic does not burn.
- We put the sauce that we have just prepared on top of the cod loins and the cooked beans.
- To finish, we put the containers in the oven at a temperature of 180º C and let it bake for 10-15 minutes.
