Eggplant stuffed with chickpeas recipe step by step

  1. We wash our aubergines well and cut them lengthwise to remove the meat from inside.
  2. We put the cut aubergines in a saucepan with boiling water with a little salt.
  3. We let the eggplants soak and simmer for about 10-15 minutes.
  4. Once the eggplants are soft, we remove the pulp.
  5. Chop the peppers and onions into very small pieces.
  6. We crush the spinach leaves.
  7. We put all the vegetables in a pan and leave them on low heat for about 10 minutes.
  8. We remove the vegetables from the pan and put all the filling inside the eggplants along with the chickpeas.
  9. We let the eggplants stuffed with chickpeas bake for about 10-20 minutes.
  10. Check the condition of the eggplants during this time.
