Easy recipe for chickpeas with spinach and egg

You often ask me about Healthy and easy to prepare vegetarian dishes. Well today I bring one of my favorites: the recipe for chickpeas with spinach and egg. This is a traditional dish perfect to eat during the coldest days in autumn or winter, although you can eat it whenever you feel like it.

Spinach is an excellent vegetable since it provides different mineral salts and elements such as iron, calcium, magnesium as well as a good amount of vitamin C, very necessary for the proper functioning of our body.

If we mix the properties of spinach with that of legumes, then we are left with a delicious, nutritious and very healthy dish. It is a very simple dish to prepare. We just need to boil the chickpeas and cook them together with the spinach and a little onion and garlic.

If you want you can cook them with a little bacon but then it will no longer be a vegetarian dish. We prefer to add some hard-boiled egg halves.

How to make chickpeas with spinach and egg

  1. The first step is to soak the chickpeas overnight if we choose to use them raw. The next day we strain them and put them in a pot with water. Let them cook for a few minutes until they are soft. If you prefer, you can use jarred chickpeas that are already cooked and that you can find in any supermarket.
  2. Cut the onion and garlic into small pieces. At this point we can also wash the spinach leaves well and cut them into smaller pieces. We reserve.
  3. In a casserole (clay if possible) add a splash of olive oil and let it heat up. Once the oil is hot, add the chopped garlic and the chopped onion. We let it cook until the onion begins to brown.
  4. We put a little salt on the spinach and add it to the casserole with the garlic and onion. At first they will take up a lot of space but as they cook their volume will reduce. We cover the casserole and let it cook over medium heat for about 5-10 minutes.
  5. While the spinach is cooking, in a separate saucepan we bring water to boil. Once the water boils we add the 3 eggs and wait 10 minutes.
  6. When the spinach has reduced in volume and begins to be cooked, add the chickpeas and a little sweet or spicy paprika. We add normal water or water left over from when we cooked the chickpeas. The water should not cover all the chickpeas. We remove all the ingredients and cover the casserole. Let everything cook together for about 15-20 minutes over medium heat.
  7. Once this time has passed, we check that all the ingredients are well cooked, add a little salt if necessary and let it rest for ten minutes at room temperature.
  8. After 10 minutes of cooking the eggs, we take them out, cut them in half and put the halves on top of the spinach and chickpeas.
  9. Now all that remains is to serve the dish and enjoy a healthy dish made with chickpeas, spinach and eggs.
