Cod recipe with sanfaina
Today's dish is one of my favorites. It is a traditional dish that is very simple to prepare and has a delicious flavor. We simply need to make chup chup with some vegetables and prepare a good fried cod. We put everything together and we now have our cod with sanfaina ready to eat.
The most important part of this recipe is that the cod is well desalted. To achieve this we must leave the cod loins in water for two days before eating it. Sanfaina, also known as pebrereta, ratatouille or ratatouille, is a dish made from vegetables such as pepper, eggplant, onion, tomato and zucchini. You can also add other vegetables such as pumpkin or potatoes.
The trick to a good sanfaina is the cooking time of each of the vegetables. Each vegetable has its own cooking time. Therefore, we have to add them to the pan depending on how long they take to cook. If we calculate the times well then we will cook an exquisite sanfaina.

How to make cod with sanfaina
- To prepare the sanfaina, peel the onions and chop them into small pieces.
- Next we take the green and red peppers, open them, pour water inside and remove the seeds inside. We cut into small pieces and reserve.
- Wash the zucchini and aubergine and cut them into as small cubes as possible.
- We take the tomatoes, cut them in half and grate them in a bowl. We keep the bowl with the grated tomato.
- Once we have the vegetables cut, we take a frying pan, put oil and leave it on medium heat. Once the fire is hot add the peppers. Optionally we can cut some pieces of garlic and put them in the hot oil.
- We leave 5-10 minutes for the peppers to cook a little and once this time has passed we add the onion to the pan. We wait 5 more minutes and we are stirring the mixture to ensure a homogeneous cooking of the vegetables.
- Put the rest of the vegetables in the pan and add the grated tomato. We remove all the ingredients.
- Add a little salt and cover the ratatouille for 20-25 minutes.
- While the ratatouille is cooking, we are preparing the cod. It is important that it is desalted.
- We take another frying pan, put oil and let it heat on the fire.
- While the fire is hot, flour the cod fillets.
- Once the oil is hot, add the cod pieces with flour to the pan and fry on both sides.
- Once the cod fillets are fried, serve them on a plate and reserve.
- We check the status of the sanfaina. If it is already done, we take it off the heat and add a little to the cod on each plate. We taste the sanfaina and if necessary we add a little more salt.
- We already have the cod dish with ratatouille. Now all that's left is to enjoy a good meal in company.
