Traditional Catalan chickpea recipe

Today's recipe is traditional from Catalonia: Chickpeas Catalan style. Is a dish prepared with sautéed onion and tomato with cooked chickpeas. You can add other ingredients such as spinach or hard-boiled egg and a splash of white wine to give it a special touch.

How to make Catalan chickpeas with spinach

  1. The first thing we must take into account when preparing good Catalan chickpeas with spinach is to know if we will buy the chickpeas already cooked or raw. If we do not buy them cooked, it is important to let them soak the night before cooking this dish. The next day, before starting to cook, in a pot with boiling water we let the chickpeas cook for approximately 60-90 minutes. In a pressure cooker, the time decreases considerably to 20-30 minutes. Remember to save the water with which we boiled the chickpeas as we will need it later. If you buy them cooked you can skip this step.
  2. Cut the onion into small pieces and cook it in a saucepan with a little olive oil until it starts to turn golden. During this time we can grate the tomatoes and set aside. We can also use natural crushed tomatoes.
  3. Once the onion is golden, add the grated or crushed tomato and cook everything together over medium heat for about 5 minutes. We add the tablespoon of flour, the splash of white wine and mix to integrate all the ingredients well. We let it cook for 5 more minutes.
  4. After this time we add a ladle of the chickpea cooking broth. If we have bought them cooked we can add water instead of the broth. We remove everything.
  5. Add the cooked chickpeas to the casserole and let them reduce for a few minutes to obtain a thicker sauce. At this point we can add the spinach. Meanwhile, we will prepare the bite.
  6. We peel the garlic, cut it into small pieces and place it in a mortar along with the fresh parsley and almonds or hazelnuts. We crush everything with a pestle until we obtain a paste.
  7. We add the minced meat to the casserole, mix all the ingredients well and let it cook over low heat for another 5-10 minutes.
  8. While the Catalan chickpeas with spinach finish cooking, in a separate saucepan we heat water until it boils. Once it is boiling, add the 4 eggs and leave over medium heat for 10 minutes.
  9. We remove the chickpeas from the heat and serve on 4 plates. We take out the hard-boiled eggs, peel them and cut them in half. In each of the dishes we will add two halves of egg to the chickpeas. All that's left to do is enjoy some good Catalan-style chickpeas with spinach and hard-boiled egg!
