Calamari with onion and white wine recipe
Today I bring to the recipe blog a dish that takes me directly to childhood : squid with onion. Many times my grandmother prepared them for me to eat. I remember her telling me: when you're older and it's your turn to cook, if you're too lazy to spend time in the kitchen, prepare this recipe. It is an easy, nutritious and cheap dish.
Twenty years later it has become one of my favorite easy dishes . Simply cut garlic, onion and optionally a red pepper. We wash the squid, add it to the casserole with the rest of the ingredients and let it cook. Have you seen how simple?
If you want the squid with onions to turn out better, I recommend prepare them with caramelized onion . Caramelized onion is easy to prepare but takes a lot of time.
It should be cut and allowed to cook over very low heat. This way the onion's own sugars will come out and it will cook with its own sugars. This is one of the best tricks to cook the best onion squid in the world!

How to make squid with onions
- The first step is to clean the squid well. We can ask them to do it at the fishmonger or we can also do it ourselves. We pass some water and separate the tentacles from the body. We remove the head from the tentacles. We turn the body of the squid inside out as if it were a sock. We make sure there are no remains of the exoskeleton, we pour plenty of cold water and set aside.
- Once the squid is clean, we can prepare the vegetables. Cut the onion into julienne strips and chop the garlic into small pieces. We wash the pepper, open it and also run water inside to remove the seeds. We cut the pepper into strips.
- In a saucepan we add plenty of oil and let it heat up. While it is heating, add the bay leaves and once the oil is hot, add the onion, garlic and red pepper.
- Let cook for about 5-10 minutes over medium heat. Once the vegetables begin to cook, we also add the pieces of squid. Stir to integrate all the ingredients well.
- We add a little salt and sweet paprika. We also add the glass of white wine and cover the casserole. Let cook over low-medium heat for approximately 45-60 minutes. The exact time is until the squid pieces are very tender. For this reason, it is very important to check the cooking point of the squid during this time.
- Once they are tender, remove the casserole from the heat. Let's see if it needs more salt. If so, we rectify it. We let it rest for a few minutes. Now we can serve them and enjoy some delicious squid with onion!
