How to make baked sea bass

  1. An important part of this dish is choosing fresh sea bass. Be sure to catch whole sea bass without guts or scales. If possible, check that it does not have cuts to prevent it from drying out a lot during the cooking of the fish.
  2. We start by cutting the potatoes into not very thick slices (less than 1 cm) to prevent them from being raw inside. We also cut the onions into strips or rings (whichever you like best). At this point we preheat the oven to a temperature of approximately 200ºC.
  3. If you decide to add tomatoes to the baked sea bass recipe, wash them and cut them into small pieces. If you don't want to add tomatoes you can skip this step.
  4. We take a tray suitable for oven and add a little oil. It is advisable to spread it throughout the tray using a brush or a little kitchen paper.
  5. Season the potatoes with salt and pepper and place them well distributed on top of the tray. On top we add the onion cut into rings or strips. We add the rest of the ingredients: the bay leaves, the tomato pieces, the peeled garlic cloves and the glass of white wine.
  6. When the oven is hot, we put the tray with the vegetables. Remember not to add the sea bass yet, since this fish needs less time to cook than the rest of the ingredients. We let it bake for about 15-20 minutes. This time is approximate. To know the exact time, it is best to check the condition of the potatoes until they are almost done.
  7. Once the potatoes are soft and almost done, we take the tray out of the oven and add the two whole sea bass, clean and without scales. We season the fish a little, take a little juice from the tray and pour it over the sea bass (if there is not enough we can add fish stock). We put it in the oven and let it cook for 15-20 minutes. The exact time will be determined by the fish's eye. When it turns white it means it is ready to eat.
  8. All that remains is to remove the tray from the oven, serve and enjoy a good baked sea bass with potatoes and white wine accompanied by family, friends or partner.

I started cosmorecipes in 2020 during the time we were cooped up at home. Having so much free time I spent a lot of time in the kitchen trying different dishes. So I decided to mix cooking with my other great passion: web programming. That's why I decided to open this blog where I post the different recipes that I'm cooking.
