Andalusian style chicken with almonds recipe

How to Make Grandma's Almond Chicken
- The first step is to cut the vegetables. Cut the onion into julienne strips and the carrots into slices. We also cut the chicken breasts into pieces.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken pieces and cook until golden brown on all sides. We remove the chicken from the pan and set aside.
- In the same pan, add the raw almonds. Lightly toast them until they are slightly golden. We constantly remove to prevent them from burning. Next we remove the almonds from the pan and set aside.
- In the same pan, put the onion and carrot slices. We cook until they are tender and slightly caramelized.
- We put the chicken back in the pan and add the chicken broth. We mix all the ingredients well and let the broth boil and reduce a little.
- Turn the heat down to medium-low, cover the pan, and let the chicken simmer for about 15-20 minutes, or until tender and cooked through.
- During cooking, we can add a little salt and pepper to taste.
- Once the chicken is cooked, add the toasted almonds to the pan and mix gently to blend all the flavors.
- We cook for an additional 2-3 minutes so that the flavors integrate.
- We serve the chicken with almonds hot accompanied by white rice or noodles.
