How to Make Grandma's Orange Chicken Breasts
- Marinating the chicken: We start by squeezing the juice from the two oranges into a large bowl. Add the brown sugar, soy sauce, minced garlic and grated ginger. We mix well. Now, season the chicken breasts with salt and pepper, and dip them in the marinade. We let it rest in the refrigerator for at least 30 minutes.
- Cooking the chicken: Heat the olive oil in a large skillet over medium-high heat. Remove the chicken breasts from the marinade (reserving the marinade) and cook them in the pan until golden brown and cooked through, about 6-7 minutes per side.
- Preparing the sauce: While the chicken is cooking, bring the reserved marinade to a boil in a small saucepan. Reduce the heat to low and let it simmer for about 10 minutes, until it thickens and turns into a sauce.
- Completion and presentation: Once the chicken is cooked, we pour the orange sauce over the chicken breasts. We cook everything together for a couple of minutes so that the flavors combine. Serve the chicken hot, sprinkled with chopped chives and, if desired, sesame seeds. I like to accompany the orange chicken dish with a little rice.
