Zucchini and spinach cream recipe step by step
- Wash and cut the zucchini into cubes. Peel and chop the onion into julienne strips.
- Peel and chop the garlics.
- Sauté the onion over low heat in a pot with 2 tablespoons of olive oil.
- Add the garlic and cook for another minute.
- Add the zucchini to the pot and sauté for a couple of minutes.
- Add the vegetable broth to cover and bring to a boil.
- Next, lower the temperature, cover the pot and let it cook for around 20 minutes and at the last moment add the spinach.
- Blend well until you have a fine, smooth cream.
- Once crushed, add the lemon juice, salt and pepper to taste.
- Mix well and reheat in the pot.
- Finally, add the liquid cream and mix again.
- Serve with some pumpkin seeds on top.
Tricks to get the best zucchini cream with spinach
Save a small amount of the vegetable broth before blending. This way, if it is too thick, we can add a little bit of this broth until we get the best texture.
