Pumpkin cream with oranges recipe step by step
- Clean the pumpkin by removing the skin and the central part (where the threads and seeds are located) and cut it into small cubes.
- Peel and cut the onion in juliana. Peel and mash the potatoes (insert the edge of the knife and pry to remove the piece of potato).
- Sauté the onion over low heat in a pot with 2 or 3 tablespoons of olive oil. Add the pumpkin, carrots and potato and cook for a couple of minutes. Add the broth to cover and cook for around 20-30 minutes.
- Cut the parmesan cheese and add it to the pot. Continue cooking for 10 more minutes. Blend well with a blender to obtain a creamy texture. If it is very thick, it can be made a little more liquid by adding a little broth or water.
- Peel and chop the oranges. You have to clean them well, removing all the white part that tastes bitter. Add the oranges to the rest and blend.
- Season to taste and serve. It can be garnished with some pumpkin seeds previously browned in a pan with a little butter.
