Zucchini cream with asparagus recipe step by step
- Wash and cut the zucchini into cubes.
- Cut and discard the bottom of the asparagus and chop the rest.
- Peel and chop the onion into julienne strips.
- Peel and chop the garlics.
- Sauté the onion over low heat in a pot with 2 tablespoons of olive oil.
- Add the garlic and cook for another minute.
- Add the zucchini and asparagus to the pot and sauté for a couple of minutes.
- Add the chicken broth to cover and bring to a boil.
- Next, lower the temperature, cover the pot and let it cook for around 20 minutes.
- Blend well until you have a fine, smooth cream.
- Once crushed, add the sherry wine, salt and pepper to taste.
- Mix well and serve in individual bowls.
- Finally, drizzle a little liquid cream on top. You can also place some grilled asparagus on top to decorate.
