How to make mussels a la marinera

  1. The first step (and most important) is to wash the mussels well. We put them under the tap water and scrape off the beards they have. It is essential to remove all its impurities and filaments.
  2. We put plenty of water in a saucepan, add a little salt, the bay leaves and add the kilo of already washed mussels. We cover the casserole, put the fire high and leave until the water boils. The objective of cooking is to keep them open. Once opened, reserve the mussels and the water with the boiled ones.
  3. In a wood we chop the 2 medium onions and the 2 cloves of garlic into small pieces.
  4. In a frying pan we put a little oil and let it heat up. Add the chopped onion and chopped garlic. Once the onion begins to brown, add the tablespoon of flour and cook for 3 minutes over medium heat.
  5. After this time we add half a teaspoon of sweet paprika, the glass of wine and a glass of the broth with which we have previously boiled the mussels. Mix everything and let the alcohol reduce for a few minutes.
  6. After this time we can put the mussels in the delicious sauce that we have just prepared. We mix everything so that each of the mussels is well impregnated with sauce. We let it heat up for a few more minutes and we can now serve these exquisite mussels a la marinera.
