Cerdanya trinxat recipe
I tried this typical dish from La Cerdanya, Andorra and La Seu de Urgell for the first time last summer, when I spent a few days in the mountains, in a town called Alp, near Puigcerdà.
I remember that we were returning from a long excursion through the Cadí meadows and we decided to have dinner in a restaurant where the star dish was this trinxat made with cabbage, potato and pork.
I didn't have them all on me when we ordered the dish. I didn't know if I would like this mix of ingredients.
And what a surprise when I tried the cabbage and potato trinxat recipe!
I was very surprised at how good this dish was. It is true that we had come from a long excursion and I was hungry. However, I will admit that it was delicious and I ate until I was very full.
A few weeks later, when I was home, I decided to try cooking it myself. It was a simple dish so the first time I made it it was quite good.
It is a very simple recipe. We just need some winter cabbage, potatoes, and pork fat. There are some variants. For example, in the Seu de Urgell region they sometimes change the bacon for pork jowls.
We recommend accompanying this typical dish from the Catalan Pyrenees with a good glass of red wine from Empordá.

Ingredients for cabbage trinxat
How to make trinxat de la Cerdanya
- We put water in a saucepan and let it heat over high heat.
- While we peel the potatoes and cut them into medium cubes.
- We wash the cabbage to remove any traces of sand or other contaminants. We chop the cabbage.
- When the water is boiling, add the potato and wait about 20-30 minutes. It is important to check the condition of the potato by pricking it with a fork since the time we have mentioned is approximate.
- Once the potatoes begin to be soft, add the cabbage that we have previously washed and chopped and leave the mixture for 10-15 more minutes over medium heat.
- During these 10-15 minutes that we leave the potato and cabbage in the casserole we can take advantage of it to cook the Iberian pork bacon.
- We cut the bacon strips and add them to a frying pan with a splash of olive oil.
- We leave it on medium heat and stir, making sure that the pieces are toasted on all sides.
- We check the condition of the cabbage and potatoes and if they are ready, we take them off the heat and put them in a container.
- Once the pieces of pork bacon are well toasted, we remove them from the pan.
- With the help of a fork, a spoon or some whisks we energetically mash (crush) the cabbage and potato mixture.
- In the same pan that we used for the bacon, add the peeled and sliced garlic cloves with a splash of oil.
- Once the garlic is toasted, we remove it and add the cabbage and potato trinxat. We cook for about 10 minutes. It is important to make sure that it is done on both sides, as if it were an omelette.
- Finally we took the trinxat off the fire. We cut some pieces of black sausage and mash it with the mixture we have prepared. If you don't want to mix the cabbage and potato with the sausage, we can also put it in slices on top without crushing it.
- We put the toasted garlic and bacon on top of the crushed cabbage, potatoes and black sausage.
- We serve and enjoy this delicious typical dish from Cerdanya.
Preparation of Cerdanya trinxat in Thermomix
- We put the winter cabbage in the Thermomix glass. Let the vegetable shred for 12 seconds. We remove the shredded cabbage from the food processor and save it for later use.
- We add a little oil to the Thermomix glass and leave it for 4 minutes at Varoma temperature and speed 1.
- We add the peeled garlic and leave it at speed 5.
- Now it's time to add the Iberian pork bacon with the garlic. We let it cook at Varoma temperature and speed 1 for 5-10 minutes.
- We add the shredded cabbage, a glass of water and a little salt and leave it at 120ºC and speed 1 for 5 more minutes.
- Finally, add the diced potato and program the food processor or Thermomix for 20-25 minutes at speed 1 and temperature 120ºC.
- We finish mashing the potato and cabbage and also add slices of black sausage to the mixture. We can also grind the black sausage or leave it on top of the trinxat in the form of slices.
