I love preparing cosmo recipes. I am always researching new options to be able to prepare healthy dishes that are liked even by those people who do not like vegetables very much or for children, who often prefer other types of less healthy meals.

Today I bring a different way of cooking vegetables. Preparing a delicious cake with a mixture of eggs, cream and our favorite vegetables.

The main recipe is to prepare this rich cake in the oven. However, many people have asked me if it can be prepared in the oven or using the Thermomix. For this reason I also leave you the recipe for the vegetable pie in the microwave and with the food processor.

Another frequently asked question is how to prepare this vegetable tart without cream for those who are lactose intolerant. I recommend the option of using a lactose-free cream. However, we can also prepare this dish without the use of cream, only with the eggs.

We can prepare this meal with the vegetables that we like the most. For example, I have decided to make a vegetable cake with zucchini since I love it.

How to make baked vegetable pie

  1. We put water and a pinch of salt in a saucepan. We put the green beans and peas and brought it to a boil. We let it cook for about 10 minutes.
  2. While the beans and peas are cooking, cut the carrot into small cubes and add it to a pan with a drizzle of olive oil. Stir the carrot for 5 minutes while it cooks.
  3. Peel and cut the onion into small parts.
  4. We open the peppers, remove the seeds and also cut it into small portions.
  5. Wash the zucchini and cut it into small cubes. We can peel it or leave it with the skin.
  6. Add the vegetables that we have just prepared to the pan together with the carrot. We cook 10-15 minutes. If we want to use mushrooms, we cut them into slices and put them in the pan as well.
  7. While the vegetables are cooking, we put the eggs in a bowl type container. Season to taste and add the cooking cream. We mix everything.
  8. Once the vegetables are cooked, let them cool down a bit, add them to the bowl with the beaten eggs and stir everything so that it is well mixed.
  9. Take a mold and grease it with oil or butter. Pour the mixture of scrambled eggs and vegetables into the mold.
  10. We preheat the oven to 160ºC. When it is hot, we put the mold with the mixture and let it bake for 40-45 minutes.
  11. During this time it is important to pierce the cake until the fork comes out clean. This way we can bake it for the exact time.
  12. When it is ready, we wait a bit for it to cool down and it is easier to remove the mixture from the mold.
  13. We already have our vegetable cake ready to eat! If you want you can add a mushroom sauce on top. Below we tell you how to prepare it.

Preparation of the cake with vegetables in the microwave

  1. Once we have the mold with the mixture of eggs and vegetables, we put it in the microwave and let it cook at a power of 500-600 W for 15-20 minutes.
  2. We check the condition of the cake with a fork or a toothpick. We click and if it comes out clean it means it is ready. If not, we put one more minute and check again.
  3. We repeat this procedure until it is cooked.
  4. We wait for it to cool a little so that it is easier to remove the mold.
  5. We serve the vegetable pie and all that remains is to enjoy an excellent meal.
  6. We can eat it both warm and cold.

Step-by-step preparation of the cake with vegetables in Thermomix

  1. We put the carrot cut into large pieces in the Thermomix glass. We cut at speed 2 for 3 seconds.
  2. We add the zucchini to the Thermomix and chop at speed 4 for 4 seconds.
  3. We cut the onion and chop it at speed 4 for 3 seconds.
  4. We place the butterfly on the blades and add a little oil. Sauté the vegetables for 5 minutes at 120ºC and speed 1.
  5. We remove the vegetables from the Thermomix and put the mixture in a container.
  6. We add the eggs and cream to the glass of the food processor and season with salt and pepper to taste. We mix these ingredients for 15-20 seconds at speed 3.
  7. We put the mixture in a mold. We cover and line it with typical kitchen plastic wrap. Then we cover it with aluminum foil. We have the option of covering the top with 2 absorbent sheets.
  8. We put water in the glass of the food processor. Put the varoma in the correct position and cook for one hour (60 minutes) at varoma temperature and speed 2.
  9. After this time we remove the papers that cover the mold, uncover and check if our vegetable tart is already curdled by poking with a toothpick.
  10. If it is not curdled yet, add a little more water in the glass and let it cook for another 10 minutes. We repeat the verification process.
  11. Once it is well curdled, let it cool to facilitate the process of removing the mold.
  12. We serve the vegetable tart. We can accompany it with a little mayonnaise. However, if you still have energy left, we will show you how to prepare an exquisite mushroom sauce to accompany your cake.

Preparation of the mushroom sauce

  1. Chop the onion. Wash and slice the mushrooms into slices.
  2. Put a drizzle of olive oil in a frying pan and fry the onion until soft.
  3. Add the mushrooms to the pan. Sauté the onion and mushrooms until the water in the latter has evaporated.
  4. Then we add the cream and milk and let everything boil for 10 minutes.
  5. We put the mixture in a blender glass and blend everything until there is a homogeneous sauce.
  6. When the vegetable pie is cold we add this mushroom sauce on top.
  7. Now you can enjoy the vegetable pie with a delicious mushroom sauce!
