Spaghetti recipe with sautéed vegetables

Today's recipe can be cooked by anyone. It is not necessary to have experience in the kitchen since we only have to prepare some vegetables and cook some spaghetti.

Spaghetti with sautéed vegetables is one of my favorite pasta dishes. Especially when I add soy sauce and parmesan cheese. It's delicious!

We can add any vegetables we have in the refrigerator to this dish. The ones I have written in the recipe are the ones I had in my house today, but other days I like to add mushrooms, potatoes or cherry tomatoes.

Another important point is the dressing we choose. As I said, I love to accompany it with soy sauce and cook it in a wok in the purest Asian style.

We can also add pepper, oil and salt or even basil pesto or rosso pesto.

We can also cook variants of this dish. We can prepare spaghetti with vegetables and chicken, spaghetti with vegetables and shrimp or even spaghetti with vegetables and beef. Adding some type of meat will provide proteins to the recipe apart from the carbohydrates, mineral salts and vitamins thanks to the pasta and vegetables.

The last tip I give you is to add broccoli. This vegetable is one of my favorites not only for all the benefits it brings us but also for its flavor. How to make spaghetti with vegetables

  1. We take a saucepan, fill it with water and let it heat over medium heat until it boils. Add a little salt.
  2. Once the water is boiling, we add the 400 grams of spaghetti. We let it cook for 10-15 minutes. If they are integral they will take a little longer to cook. We recommend following the instructions on the package of spaghetti.
  3. Once the spaghetti is cooked, drain and set aside.
  4. While the spaghetti is cooking we can prepare the vegetables.
  5. We peel the onion and the garlic clove. We chop them into small pieces.
  6. Cut the green and red peppers in half, pour some water over them and remove the seeds inside. We cut into medium pieces.
  7. Cut the aubergine or zucchini into cubes or slices. I don't remove the skin, but they can be peeled before chopping.
  8. We peel the carrots and grate them.
  9. Once we have the vegetables cut, we take a frying pan and add a little oil.
  10. Add the chopped garlic clove and cook for about 3 minutes.
  11. Then add the peppers and onion. Let cook for about 10 minutes until the onion begins to brown and the peppers are slightly done.
  12. Add the pieces of eggplant or zucchini. We also add the carrot and we are removing the ingredients. We cook for 10 more minutes until we see that the vegetables are almost cooked.
  13. When the vegetables are almost done, add the spaghetti and stir everything to mix the flavors. At this point I like to add a bit of soy sauce to the mix.
  14. We leave about 5 minutes. We check that the vegetables are cooked and serve on 4 plates.
  15. We add black olives, a little ground pepper and grated Parmesan cheese.
