Traditional recipe of macaroni with bolognese sauce
I love pasta recipes. You can prepare them in a thousand ways with completely different tastes. Every week I try a different pasta dish.
Last week I prepared the typical dish of macaroni bolognese lifelong. I hadn't cooked it for months and I didn't remember how good it is!
While I was cooking it I thought I hadn't added it to the cooking blog yet, so here it is: The best macaroni bolognese sauce recipe in the world!
Is a very simple dish To prepare. It is simply a matter of chopping a few vegetables such as onion, garlic and carrot. Sometimes I also like to add a celery but this time I didn't have it.
We put the vegetables to poach for a few minutes, add the meat, the tomato and let it cook. The trick is in let the sauce simmer for about an hour and above all, without letting the liquid evaporate from the heat.
We must control the sauce and add white wine or water when we see that there is little liquid left. I always add white wine to cook. I love the touch it gives to the sauce! But you can add water or also vegetable or chicken broth.
I also recommend adding some typical pasta cheese such as Mozzarella, Gorgonzola or Pecorino. It looks great!

How to make macaroni bolognese: preparation of the sauce
- The first step is to cut the onion into brunoise, chop the garlic into small pieces and cut the carrot into small pieces (see the image of the procedure). In a pan we put a drizzle of olive oil and let it heat up.
- Once the oil is hot, add the vegetables (garlic, onion and carrot) and let them brown over low heat for approximately 10 minutes.
- Once the vegetables begin to brown, we add the minced meat and let it cook for a few more minutes until we see that the meat begins to change color.
- We add 100 milliliters of white cooking wine, stir everything well to mix the ingredients and leave the alcohol in the wine to evaporate over medium heat.
- While we take the juicy tomatoes and cut them. We also prepare the bottle of concentrated tomato, fried tomato or natural tomato.
- Once the wine has evaporated, add the tomato pieces and add 2 tablespoons of tomato concentrate or 4 tablespoons of fried/natural canned tomatoes. We also add a glass of water and stir everything intensely to get a good mix of the ingredients.
- Now we must let everything cook over low heat for approximately 50-60 minutes. During this time we must monitor that the liquid does not evaporate. If we see that it is about to evaporate, we add more white wine, water or even chicken broth. The important thing is that it never completely dries. When we add liquid we stir the mixture.
How to make macaroni bolognese: preparation of the macaroni and presentation
- We can take advantage of this time to prepare the macaroni (it is advisable to start preparing them when 35-40 minutes have passed to prevent them from getting cold). In a large pot we add water and add a little salt. Let it heat over high heat until the water boils.
- Once the water is boiling, lower the heat to medium and add the macaroni. Normally the amount of dry pasta per person is about 100 grams. Therefore, in total there are about 400 grams for a recipe for 4 people. If you don't have enough to weigh, 100 grams is approximately the amount that fits in a normal-sized glass or cup (200-250 milliliters).
- We leave the macaroni for 8-12 minutes. You will find the exact time on the macaroni package since it depends a lot on the brand. The exact time will also depend on whether you like them raw or soft. This is up to everyone's decision. In my case, I cooked them for about 10 minutes.
- We check if the bolognese needs more liquid. If so, we add a little more wine or water. Once the macaroni is done, remove it from the heat, strain the water and return it to the pot.
- After 50-60 minutes we wait for the sauce to become very thick. When it is to our liking, we take it off the heat and pour all the Bolognese sauce into the pot where we have the macaroni. We mix everything well. Optionally we can add a little grated cheese that will melt with the heat of the pot.
- Once it is well mixed, we serve it on 4 plates. We add a little grated cheese on top and we can now enjoy some exquisite macaroni with Bolognese sauce.
