How to make macaroni with spinach and cream step by step

  1. We start the preparation by boiling water for the macaroni in a large pot. When it starts to boil, add a tablespoon of salt and the macaroni. We follow the instructions on the package to cook them until al dente.
  2. While the pasta is cooking, we take care of the spinach. We wash the fresh spinach leaves under the tap and drain them well. Peel and finely chop the garlic cloves.
  3. In a large frying pan, heat a little olive oil. Add the chopped garlic and fry it until golden.
  4. Next, we add the spinach to the pan. Cook over medium heat, stirring occasionally, until the spinach is tender and has reduced in size.
  5. Once the macaroni is ready, drain it, reserving a cup of the cooking water. We add the macaroni to the pan with the spinach.
  6. Add the heavy cream and a little of the cooking water to the pan with the macaroni and spinach. We mix well so that all the ingredients are combined. We let it cook for a couple of minutes so that the flavors mix.
  7. To finish, we add the grated Parmesan cheese. We mix until the cheese has melted and integrated with the pasta and spinach. We taste and adjust with salt and pepper to taste.

Some tips for making macaroni with spinach

If you want to give this dish a touch of freshness, you can add a little lemon zest along with the Parmesan cheese.

If you prefer a vegan version, you can use cashew cream instead of heavy cream and vegan cheese instead of Parmesan.

You can also add a little bacon as it will give flavor to the recipe.
