Easy Rib Casserole Noodles Recipe

The casserole noodle recipe is a typical dish of Catalan gastronomy. It is a very easy dish to prepare and consists of thick noodles cooked with a sauce of tomato, peppers and onion. Meat or fish broth is also usually added, although there are people who only add water.

It is usually prepared with pork ribs or some other type of meat. We can really make many variations of this recipe. For example, I also like to add peas and two types of peppers: red and green.

When winter comes I always add this recipe to the weekly menu and sometimes I even cook it twice a week, since it is perfect to warm up on icy winter days.

How to make casserole noodles

  1. To start, we take a saucepan and add a splash of olive oil. We let the oil heat over high heat.
  2. Once the oil is hot, add the pork ribs and let them take on a little color.
  3. While the ribs are browning, we will prepare the vegetables.
  4. We peel the onion and garlic and chop them into very small pieces.
  5. We take the green and red peppers, open them, remove the seeds from inside and pour plenty of water over them to wash them. Next we cut them into small pieces.
  6. Peel the ripe tomatoes and cut them into medium-sized pieces.
  7. Once the pork ribs are golden, remove them from the casserole and add the vegetables that we have just prepared: garlic, onion, peppers and tomatoes. We put a little paprika and the bay leaf in the sauce we are cooking.
  8. We let the sauce cook for about 10 minutes over medium heat. We stir the mixture of ingredients periodically.
  9. Once this time has passed, we add the ribs again, together with the fish or meat broth (we can also add water instead of the broth) and the noodles. Optionally we can add peas.
  10. We let it rest for a few minutes. We can look at the package of noodles for just how long it takes to cook. We are stirring the noodles.
  11. Once they are done, turn off the heat and let them rest for 10-15 minutes so that they absorb the flavor of the sauce with the broth.
  12. We now have our casserole noodles with pork ribs and vegetables ready! You just have to enjoy this delicious dish from Catalan cuisine.

Thermomix casserole noodles

  1. Add the ingredients for the sauce in the food processor glass, that is, the garlic, the onions, the green and red peppers and a little olive oil. We chop everything at speed 4 for 6 seconds. Sauté for 8-10 minutes at Varoma temperature.
  2. We put the butterfly on the blades and add the pork chops to the Thermomix glass and set a temperature of 120 ºC. Let cook for 10 minutes, reverse turn and spoon speed. This will cause the Thermomix to mix the ingredients slowly.
  3. Add the fish or meat broth (we can also add water). We also add the ripe tomatoes, a little salt and paprika. Let cook at 100º, reverse turn and spoon speed for 30 minutes.
  4. Finally, add the noodles and cook at a temperature of 100 ºC, reverse rotation and spoon speed to stir everything at a slow speed for 10-15 minutes.
  5. We serve and eat this fantastic typical Catalan dish of casserole noodles with ribs.
