Traditional recipe of pig trotters in sauce
Today I present to you one of my favorite dishes (although I hadn't eaten in a long time): pig's trotters in sauce. Many people say they don't like the texture of pig's feet. However, I find them delicious.
An important part of the recipe is the sauce with which they are cooked. That is why I will show you below how to cook a delicious homemade sauce made with onion, garlic, tomato, bacon and a little white wine.

How to prepare granny's pig trotters
- The first step is to boil the pig trotters. We fill a large pot with water and put the pig's trotters together with a whole onion (without the skin), the leek cut in half, the whole peeled carrot, the bay leaves, the thyme branch and a little salt.
- Once we have all the ingredients submerged in the pot with water, we boil it for about 45 minutes in a pressure cooker. If you don't have a pressure cooker, you can leave it on high heat for approximately 3 hours.
- After this time we take out the pig's trotters and reserve the water we have used since we will use it later when we prepare the sauce.
- It's time to prepare the sauce! We take the other onion and cut it brunoise style. Chop the garlic cloves into small pieces.
- In a casserole, add a splash of olive oil and let it heat over high heat. Once hot, add the onion and garlic that we just cut.
- Once the onion becomes transparent, add the diced bacon and let it cook for a few minutes.
- Next we add the flour, let it cook for 3 minutes (without stopping mixing) and pour the glass of white wine to cook. Let's reduce the alcohol.
- Once the alcohol has evaporated, add the sweet paprika and a little salt. Stir to mix all the ingredients well.
- Finally we add the 160 milliliters of tomato and about 400 milliliters of the water that we have reserved from cooking the trotters. We mix everything.
- Add the pig's feet into the sauce that we are preparing and let it cook for about 25-30 minutes over medium heat. It is important that after a quarter of an hour you turn the trotters around to get them to cook on both sides.
- After this time we serve the pig's trotters in sauce on 4 plates and all that remains is to enjoy some good pig's feet with a little bread to dip in the sauce.
