Today's recipe is a classic. The cake. Who has not ever prepared it for breakfast, snack or for a birthday?

On Sunday afternoons I always like to cook a good cake and every morning during the week I eat a piece for breakfast along with a glass of milk.

This pastry recipe is very simple to make and there are many different variants. You can prepare it with yogurt, chocolate, lemon, apple or carrot.

Today's recipe is the classic one also known as Vic sponge cake. However, I have taken the liberty of adding a touch of lemon flavor with the lemon zest and yogurt. I have also added vanilla essence since I love it, but this is optional.

I must confess that many times, once I have the cake ready, I break up the dark chocolate and put it on top. It's delicious! Of course, you have to be willing to add a few extra calories to the cake.

I also highly recommend adding icing sugar on top once we have baked the cake. As you can see, it is a matter of letting your imagination fly and the recipe that I leave you here is simply a guide so that from there you can try new things and make your own formula.

How to make traditional cake

  1. We take a bowl and add the 3 eggs. We beat the 3 eggs with a manual or electric rod.
  2. Next we add the 120 grams of sugar into the bowl and beat to mix the eggs with the sugar.
  3. We preheat the oven to 180 ºC.
  4. We add the yeast envelope. Right after we add the flour, but passed through a sieve to avoid any presence of lumps in the mixture.
  5. We add the glass of oil. We beat the mixture of ingredients until we obtain a homogeneous mixture.
  6. Grate the lemon and add it with the rest of the ingredients together with the lemon yogurt. We beat again until we get a uniform mix. Optionally we can also put the essence of vanilla.
  7. Once the cake dough is prepared, grease a mold with butter or oil and add the cake dough. We put the mold in the oven and leave it for 40-50 minutes.
  8. It is important to check the condition of the cake. We can do it by nailing some cutlery and if it comes out clean it means that it is ready.
  9. We take the mold out of the oven, remove the cake from the mold, add a little icing sugar and let it cool.
  10. We can now serve it and eat it!

Thermomix sponge cake

  1. We preheat the oven to a temperature of 180 ºC with the heat option for both sides of the oven (top and bottom).
  2. In the Thermomix glass we put the sugar and the grated lemon peel. We mix for 10-15 seconds at increasing speed of 5-10.
  3. We put the butterflies on the cutting blades of the food processor, add the 3 eggs and beat for 5 minutes at 37 degrees at speed 3.
  4. Add the small glass of oil and lemon yogurt and mix for 15 seconds at speed 3.
  5. Next we add the yeast, a little salt and the strained flour (to avoid the formation of lumps). We beat 15 seconds at speed 3.
  6. We remove the butterflies from the Thermomix blades.
  7. We take a mold, spread it with a little butter or oil and add the cake dough that we have just prepared with the food processor.
  8. Once the oven is hot, put the mold with the mixture for 40-50 minutes. With a cutlery we check the condition of the cake. If we click and it comes out clean, he wants to say that it is ready.
  9. Once cooked, we take the mold out of the oven and remove the cake from the mold. We put a little icing sugar on top and let it rest to cool.
  10. Now we can serve and enjoy this delicious dish!
