How to make rabbit with onion and white wine
- Preparation of the rabbit: We wash the rabbit pieces well under cold water and dry them with kitchen paper. We season evenly.
- Sauté the rabbit: In a large saucepan with a little olive oil, fry the rabbit pieces until they are golden on all sides. Once golden, we remove and reserve.
- Sauté the onion and garlic: In the same casserole, add more oil if necessary and sauté the onion and garlic until they are translucent and tender.
- Return the rabbit to the casserole: Add the rabbit pieces to the casserole again. Then, sprinkle with the sweet pepper and mix well.
- Add the wine: Add the white wine and let it reduce by half, scraping up any bits that remain at the bottom of the pan.
- Slow cooking: Add the bay leaves and the rosemary sprig. If the liquid does not cover the rabbit pieces, we can add a little chicken broth. Let it simmer with the pot covered for approximately 1-1.5 hours or until the rabbit is tender.
