Easy baked escalibada recipe
The escalivada or escalibada is a typical dish from the region of Catalonia , originating in rural Catalan areas where the vegetables harvested in the garden were used to prepare it.
This is a very easy recipe to make. We just need some red peppers, some aubergines, tomatoes and onions .
The name of this dish comes from the Catalan verb escalivar . Escalivar is a cooking method where food is roasted in a mixture of glowing embers and ashes.
However, the escalivada can also be prepared using an oven , since many people do not have the option of cooking it on coals. For this reason, today I bring to the cooking blog how to prepare it using the typical oven that we all have at home.
My favorite way to eat escalibada is on a toasted bread accompanied by tuna and some good anchovies from the scale.

How to make escalivada in the oven
- The first step of the recipe is to prepare the vegetables to put them in the oven. We wash them with plenty of water and let them dry or dry them with a clean cloth.
- We remove the top part of the eggplants and make some cuts to facilitate cooking.
- In the case of the onion, we peel it and also pour water over it. We dry with absorbent kitchen paper.
- Next, we take a tray suitable for oven and cover it with aluminum foil.
- We add the eggplants, red peppers, tomatoes and onion to the tray and add a splash of olive oil.
- We preheat the oven to 200 ºC and once it is ready we add the vegetables.
- We bake for approximately 1 hour. It is important to control the cooking since the exact time will depend on many factors such as the type of oven or the size of the vegetables. To check the condition of the vegetables, it is advisable to prick them. When it enters without any impediment it means that they are already cooked.
- Once done, we turn off the oven and let them cool. When the vegetables are very cold, we take them out and we can start peeling.
- To peel the pepper we simply remove the skin with our hands. It is also advisable to remove the seeds that are inside. We cut the peppers into strips and save them for later.
- We repeat the process with the eggplants and cut them into strips. We reserve.
- We can cut the onions into quarters or halves. Next we are removing layers until they are in the form of strips.
- We peel the tomatoes. The skin will come off very easily after cooking. We cut them in half.
- We put everything in a glass container or on a plate. Add a little pepper, a drizzle of oil and a little salt on top.
- We can now serve and enjoy this exquisite dish of baked escalibada. In the next section we show you how to accompany this dish.
Accompaniment for the climb
We can accompany a wide variety of dishes and recipes with escalivada. However, my favorite dish is the escalivada toast with tuna and anchovies. It's delicious!
We can use country or loaf bread. We toast it and add the escalivada that we have prepared on top. Optionally, we can spread the bread with a little tomato.
We put tuna and some anchovies on top and we already have an exquisite toast made with baked escalibada, anchovies and tuna.
