Easy recipe for baked butter cookies

Today it was raining and I didn't want to spend the afternoon watching a Netflix series. So I have started researching what recipe I could try with the ingredients I had at home.

Searching and searching I have found a very simple recipe but that coincidentally I had never cooked: butter cookies. Mr. Google has told me that the first information we have about butter cookies is from the 12th century, when they began to be eaten in Great Britain, contrasting the sweetness and softness of the cookies with the bitterness of the tea.

However, it was not until 1840 when the practice of eat shortbread cookies with tea time .

They are really very good and super easy to make. We simply need to put all the ingredients in a bowl, mix well, let the dough rest and cook it in the oven.

How to Make Grandma's Shortbread Cookies

  1. In a large bowl we add the sugar. It is important to sift it with a strainer while pouring it. Next we add the butter (in an ointment texture), a little salt and optionally half a teaspoon of vanilla essence or cinnamon powder.
  2. We stir everything with manual or electric whisks until we obtain a creamy and homogeneous mixture.
  3. We add the egg into the bowl with the rest of the ingredients. We beat intensely until integrated.
  4. Pour in the sifted flour and beat slowly until incorporated into the dough. It is important that the mixture does not have lumps. We let the dough cool in the refrigerator, wrapped in plastic wrap, for about 3 hours so that it is easier to work with the dough and make the shape of the cookies.
  5. After this time, we preheat the oven to 180ºC, flour the work surface and roll out the cookie dough with a rolling pin until it is approximately 1 centimeter thick.
  6. With a cookie mold (see molds on Amazon) or with a glass we make the shape of the cookies and put them on the oven rack with baking paper. We stretch the leftover dough again with the rolling pin and make more cookies. We take advantage of all the dough.
  7. Next we put the shortbread cookies in the oven for about 15 minutes. We have to see that the outline of the cookies begins to brown.
  8. We take the cookies out of the oven and let them cool so that they gain consistency. This step is very important since when they come out of the oven they will be very soft.
  9. All we have to do is serve them and enjoy a good breakfast or snack. I personally love eating them accompanied by a good coffee.
