Recipe for lentil stew with vegetables
Today I feel like cooking a dish that I haven't prepared in a while. A good stew, but this time with lentils and not chickpeas. Also, to take care of my figure I am going to cook it only with vegetables. No chorizo, no ham, no bacon or bacon.

How to make lentil and vegetable stew step by step
- Peel and cut the red onion into medium sized pieces.
- We open the green and red peppers. We take out the seeds, pour water over it and cut it into pieces.
- We peel the zucchini and cut it into medium slices.
- Once we have the previous vegetables prepared, we peel the garlic (we will put them whole) and put a splash of oil in a pot.
- Sauté the vegetables for a few minutes and add the chopped tomato, pepper and a little salt to the pot. We cook for 5-6 minutes.
- We remove the garlic and put the vegetables from the vegetarian stew in a blender glass, add a little water or vegetable broth and blend it.
- Next, we cut the potatoes and carrots into medium portions. We add them to the pot with a little oil and the bay leaf. We cook for 3-4 minutes.
- We put the lentils with the potatoes and carrots and add the vegetarian sauce that we have previously beaten.
- We vigorously stir the lentil vegetable stew while it cooks everything together for 5 minutes.
- We add enough water or vegetable broth to cover all the foods well and let it boil.
- We periodically check the condition of the lentils until they are tender.
- We remove the pot from the heat, take four plates and serve the lentil and vegetable stew.
