Easy beef stew recipe with potatoes and vegetables

Beef stews or stews are a traditional dish of Spanish cuisine that has always been prepared in many towns in the country.

It is a very simple recipe to prepare where you only need a few vegetables, some meat and a pot or casserole in which to cook all the food.

In my house, we have always prepared this dish on Sundays in autumn and winter, since served very hot it is perfect to warm up.

This stew can also be prepared with other types of meat such as goat meat or simply chicken. You can choose the meat that you like the most. The key is to check the condition of the meat while cooking it to ensure that it is very tender.

How to make beef stew

  1. If the beef is not cut, we clean it and cut it into cubes. If we already have it cut we can go to the next step.
  2. We take a large casserole or a pot, add a little olive oil and let it heat until the oil is very hot.
  3. Once the oil is hot, add the meat and stir for a few minutes until golden. Transfer the meat to a plate and reserve.
  4. Cut the carrots into slices and chop the onion and garlic into small pieces. We add the vegetables to the pot or casserole where we have previously cooked the meat.
  5. Let the vegetables cook for about 5 minutes over medium heat (until the onion is tender). After this time we add the beef again, add the fried tomato, the wheat flour and the glass of red wine. We are stirring the mixture of ingredients.
  6. We add the bay leaf and the 3 glasses of broth. Alternatively, if we don't have broth we can add water.
  7. We cover the pot or casserole and let it cook over low heat for 60-90 minutes. The exact time is until the meat is tender. During this period we can check how tender the meat is.
  8. While the beef stew with vegetables is cooking, peel the potatoes into slices. During the remaining time we can clean the utensils we used for cooking.
  9. Once the meat is very tender, we add the potatoes. If there is not enough liquid we can add more chicken/meat broth or water. We let it cook until the potatoes are done and tender. Taste and rectify with salt and pepper.
  10. We serve and we can now enjoy a delicious dish of stewed beef with potatoes and carrots.
