Aubergines stuffed with couscous recipe step by step

  1. We put the couscous in vegetable broth and let it boil as indicated by the manufacturer of the couscous package.
  2. Wash and cut the aubergines lengthwise.
  3. We put the 4 aubergines in a pot with slightly salted water and let them boil over medium heat for about 10-15 minutes.
  4. Chop the onion and peppers into small pieces.
  5. When the eggplants are soft, remove the pulp without breaking the skin and add it to the vegetables in a frying pan with a splash of oil.
  6. Let cook for about 10 minutes and while we preheat the oven to 180º.
  7. Add the vegetables together to the couscous inside the aubergines. Optionally we can add grated cheese on top.
  8. Let the stuffed eggplants bake for 10-15 minutes.
  9. We check the cooking status of our aubergines stuffed with couscous.
  10. Season with salt and pepper, serve and enjoy this dish of stuffed aubergines!
