Recipe for eggplants stuffed with tofu step by step
- We peel the 4 eggplants and cut them lengthwise so we can put the filling inside.
- We put the eggplants in a pot with slightly salted water and leave them boiling for about 10-15 minutes so that the pulp inside softens.
- Meanwhile, chop the peppers and onion.
- Prepare the homemade fried tomato sauce: peel the tomatoes and crush them.
- We put the crushed tomatoes in a pan with oil, together with salt and sugar.
- We cover it and leave the mixture for approximately 45 minutes. We have to go mixing and adding sugar during the course of these minutes.
- Once the tomato sauce acquires a good texture and color, we put the chopped vegetables in a frying pan with a little oil, together with the tomato sauce, and cook over medium heat.
- Once the pulp is soft, we extract it and also put it in the pan with the rest of the vegetables.
- With a food processor we crush the tofu and put it also with the other vegetables.
- We put the stuffed aubergines in a preheated oven at about 180º and let it bake for about 20 minutes.
