Oven roasted vegetables recipe step by step

  1. To start, we must wash all the vegetables before roasting them. These can contain pesticides that are harmful to people in the long term in addition to eliminating bacteria that they may contain in their outer part.
  2. We start cutting the vegetables. We can use vegetable cutters to save time. We must remember that each vegetable is cut differently and as we will see in the tips, cutting is very important and not doing it randomly.
  3. We will cut the ends of the zucchini, eggplant, carrot and pumpkin and make thick slices with the rest of the vegetable. We peel the carrot and pumpkin and also cut them into slices.
  4. We cut the peppers into not very long strips.
  5. We take the floret part of the broccoli and cut it in half and repeat the process until we obtain 8 parts.
  6. We remove the skin from the potatoes and cut them into thick slices.
  7. We wash the mushrooms and remove the roots. We cut them into quarters.
  8. Once all the vegetables have been washed and cut, we preheat the oven to 200º.
  9. While the oven is heating, place the vegetables on a well-distributed tray and add dressing to taste. For example, we can put a little extra virgin oil, salt and ground black pepper.
  10. We leave the vegetables in the oven for about 40 minutes. We check by pricking the vegetables to know when they are roasted.

Cut vegetables properly

It is important not to cut the vegetables randomly since if they have different sizes and shapes the time it will take for each piece of vegetable to cook will be different. Therefore we can obtain much harder pieces than others which will make our dish not very successful.

Control cooking time

It is very important to control the time that the vegetables spend in the oven and not go watch TV or talk on the cell phone as this can cause distraction and obtain a bad result.
